Yes, SV = ¼πB²S, with SV = Stroke Volume, B = Bore & S = Stroke. All ES 175/250's have a 65mm stroke, for the ES 300 it's 72mm. The latest ES250/2 had B=69mm (making SV=243cc), the earlier ES250 & ES250/1 had B=70mm, giving SV=250.15cc - a minor legal issue. Of course B changes under a rebore.
Yes again, there is info in the VIN (like the date of manufacturing), but I do not know the details for the ES.
