Building a racebike

Picking up this Skorpion from a friend and going to build a racebike.
I plan to go with these race fairings:
Ending up with something like this. Different paint and unlikely to go with Ohlins forks

I have several questions:
- Are near-perfect original fairings/mirrors/etc worth enough to warrant selling them? Though I am unlikely to ever put the bike back to stock, if a fairing set is only worth $200 I'll just keep and store them.
For the forks--the plan is gold valve emulators and a respring. Assuming a swap is even legal for AHRMA SOS1/2 classes, is there a straight forward fork swap?
Are there good rear shock suggestions?
Are any aftermarket header/exhausts available/recommended? Main objective is to save weight.
Speaking of saving weight, does anyone make an aluminum rear subframe?
Which wheels are relatively straightforward swaps? If possible, at 4.5" or 5" x 17" since there is a lot better selection of 160 than 150 tires.
The front caliper mounts look like 40mm and I thought I read that the Grimecas take the Brembo pads. Can I just bolt on a Brembo 40mm caliper?
Are any aftermarket rearsets available?
