ETZ 301 Saxon Fun issues

Hello,
I've recently purchased an MZ ETZ 301 Saxon 'fun' and I am having (what I believe to be) fuelling issues with it.
When I first got it, it started without choke and ran, but would not idle. It was a bit scary in this state as it didn't run all that well and I had to keep it running with the throttle. The Plug was black = running rich. So I removed the carburettor to see if the idle jet was blocked, and it was not. However, I did find that underneath the main jet holder (it is a 'BING' type carb) was a load of dirt. I cleaned out the dirt and re assembled the carb, giving it a thorough clean with carb cleaner. I re set the air screw to 1 and a quarter turns out (as in my Haynes manual) and then set up the throttle stop screw so the bike idles at 1500rpm when warm. The bike still starts with no choke, but it seemed to run better.
So, I fired it up to go to work this morning, and it all seemed ok. The bike ran crisply and I headed off to work. Just as I was about to get on the motorway the bike cut out as I tried to pull away. I thought that I had run out of fuel, so I switched to reserve and started the bike. It started OK and revved up nicely. So I went to pull away again, and the bike died again. I started the bike for a third time (again with no choke) and got back on. I gave it a little choke and managed to nurse the bike home. It didn't run very well with a bit of choke, but it ran.
To me, it seems like the bike only cuts out when hot (as with my other bikes this short run to the motorway junction is enough to get them up to temperature) and it definately only occurs under load. All I did to the carb beyond cleaning it is change the air screw to standard (it was 1 and a quarter turns out when I took the carb off anyway) and adjust the throttle stop screw. I did try lowering the needle, but the bike wouldn't start so I returned it to standard. The air filter doesn't seem to be blocked, but if it was I can't understand why putting the choke on after starting the bike would make it run OK. I can't also see how the bike could be running lean after it was running so rich before. I haven't done a plug chop since I've fiddled with the carb, and that will be my next course of action.
Any ideas? I really need this bike to get to work on!
