I have recently bought an ETZ 301 Saxon which needs new boots. Most of my riding is round country lanes, usually surfaced but also a good likelyhood of loose gravel. What tyres would people recommend

I bought my 301 (project) for the same reason. It came with a variety of spares including some useable tyres, and being a project on the cheap, I was going to use up what I had before worrying too much about what tyres to buy.
That said, a trawl through ebay offers a lot of cheaper tyres. I've been told Maxxis is a good cheap tyre. I was going to go for the traditional trials type block pattern tyre but to be honest, I'll just surf the internet until I find a cheap deal - M&P seem to be consistently low-ish price.
In saying all the above, I had a pair of tyres fitted to the Guzzi a week ago and my local, independent tyre supplier was the cheapest anyway!

rear tyres on these bikes is usually 110/80x16
watch that the tire you get does not rub the chain rubber cover
the next common size is 120/80x16 and a lot of them are too wide and rub...
